Etihad Rail serves up a taste of the UAE on passenger trains

Etihad Rail is enhancing its passenger experience between Abu Dhabi and Fujairah with a specially curated onboard culinary offering developed by Capital Catering, the food and beverage arm of ADNEC Group, a Modon company.

Created by award-winning chef Maitha Warshaw under the theme “A Journey Through the Emirates,” the menu combines contemporary rail travel with Emirati culinary heritage.

It draws on locally inspired ingredients and flavours, including dates, saffron, cardamom, local honey and Arabic coffee.

A signature dish is a modern interpretation of Machboos, featuring slow-braised short rib served with fragrant Emirati-spiced rice.

The menu is available across Comfort and Premium classes, with breakfast, lunch, dinner and snacks tailored to different journey times.

A dedicated children’s menu is also available for families.

To mark the launch of passenger services, guests are being welcomed with a complimentary Ghaf Juice Shot, inspired by the UAE’s national tree, alongside locally inspired chocolates featuring flavours such as Seven Spices, Date & Caramel, and Gahwa & Cardamom.

Traditional Arabic coffee, fresh juices, specialty coffees and premium teas are also offered.

Chef Maitha Warshaw, who served as Executive Chef of the UAE Pavilion at Expo 2025 Osaka, has represented the country on international culinary stages.

Her approach combines Emirati heritage with contemporary techniques, supporting Etihad Rail’s goal of delivering a welcoming passenger experience that reflects the UAE’s culture and traditions.
